bleach + water = soap?
trying to disinfect so I poured everything out and added water and bleach and shook it. it now looks like i poured a ton of soap in there with out suds-y(?) it is.

No, it just can get a little foamy sometimes with agitation. Bleach will disinfect, but may not break up all the grease.
